There are so many amazing recipes out there that are allergen friendly, and even if they are not there is usually a conversion that will make it work!
It is national Nutrition Month and to honor it, we are converting recipes for you for free during March! March is already half way over! Please email blog or FB us, we would love to hear from you and some of your delicious recipes too!
I was starting to eat my midmorning snack of almonds, and I suddenly changed my mind to muffins! Here is what I came up with:
1 c gluten free flour (I used a bean flour combo)
1/4c Millet
1/4c flax
1/3c rice flour
pinch of tapioca starch
2 tsp Baking Soda
1 tsp Salt
mix above thoroughly
1c crushed pecans
1/2 c smashed pumpkin
1 apple finely chopped
1/4c maple syrup
1/2 c milk of choice
1 TBSP apple cider vinegar
2 TBSP Coconut oil
mix above into flour mixture
put in greased muffin tins and bake 350 for 20 min or until knife comes out clean and tops just starting to brown
So I was baking these and realized I didn't add cinnamon! crazy ya? SO I created this to top them off:
1 TBSP coconut oil
1TBSP Honey
1 tsp cinnamon
all warm, mix and top when they come out of the oven.
I made this amazing salad tonight for dinner, I came up with it, because it is what I had on hand but it turned out good enough to share!
The party in your mouth salad:
Arugula
Spinach
Cashews chopped
Shredded Coconut
Green onions chopped
Pomegranate seeds
Avocado cubed
Pineapple very small cubes
Dressing:
2 TBSP coconut oil warm not melted
juice of 1 small lime
salt
pepper
chili powder
garlic powder
1 TBSP Maple syrup
blend all ingredients in magic bullet or blender
Toss all together and Whala!
Need a quick lunch that will make your Belly Happy? Here is what we had for lunch today:
Italian noodle soup
small bunch of rice noodles or rice or quinoa or potato
1 small onion
1 small pepper
5 mushrooms
1 small Roma tomato
2 cups homemade chicken broth
1/3 cup coconut milk
1 TBSP garbanzo bean flour
garlic
salt
pepper
Cook noodles
Dice and saute veggies in some oil
add flour and spices mix until combined
add coconut milk stir and cook until thickened
add broth
add cooked rinsed noodles
heat and stir until simmering
serve... I added a bit of Parmesan cheese for the kidoos. I added a small bit of balsamic to mine, wow yum and easy too!
